Freezer Meal Prep: Breakfast Sandwiches

Prepping my freezer for baby - week 2.

My fiancé and I are getting ready to welcome our first baby in two months! Now that we're in the final countdown, I'm focused on filling our freezer with easy, nourishing meals that just need to be warmed up postpartum.


This week, I made freezer breakfast sandwiches. We can't forget about breakfast! Find the recipe below.

Freezer Breakfast Sandwiches

You Need:


Ingredients:

  • 10 eggs
  • 8 gluten-free english muffins, my favorite are from Trader Joe's
  • Salt and pepper
  • 1 cup chopped spinach
  • Sliced turkey (or protein of choice)
  • Cheese of choice, I use pepperjack


Instructions:

  1. Preheat oven to 325F.
  2. In a medium bowl, whisk eggs. Add chopped spinach, salt, and pepper. Mix.
  3. Pour into greased 8x8" pan, bake for 10 minutes.
  4. Remove from oven and top with cheese of choice.
  5. Cook for 6-8 more minutes, until cheese is melted and eggs are cooked through. Cut into 8 squares.
  6. Assemble breakfast sandwiches with sliced turkey, egg/cheese mixture.
  7. Let cool completely, wrap in parchment paper, and freeze in Ziploc bags.
  8. When ready to eat, defrost overnight or ~1 minute in microwave. Toast if desired.
